Demand for fine flavor cocoa is increasing rapidly. However, many cocoa producers who would like to grow fine flavor cocoa do not have access to the information they need about which varieties to grow, or how to ferment and dry fine flavor cocoa. Flavor development starts at the farm. The cocoa industry is undeveloped in this area. Due to the recent wave in gourmet and healthy chocolate, there is a growing need in the market place for better flavor and fermented beans.
